Healthy Cheese Cupcake Recipe

By taking some time to prepare food for yourself ahead of time, you can go about your busy week feeling refueled and replenished.

 

On Instagram, a recipe created by Karina Blackwood recently caught our eye. We reached out to her and she was kind enough to send the recipe to us so we could share it with all of you! Read along as Karina shares how to make her Healthy Cheese Cupcake recipe using our Majka Nourishing Lactation Protein Powder!

Healthy Cheese Cupcakes

 Ingredients:
  • 350-400 g (12-14 ounces) cottage cheese (curd cheese, oak)
  • 1 large egg
  • 1 scoop Majka Nourishing Lactation Protein Powder
  • 1 tablespoon stevia (or honey, or raw agave)
  • 1 tablespoon oat flour
  • 1 kiwi
  • 1 banana mashed with fork

Directions:

  1. Preheat oven up to 356° F.
  2. In a big bowl, whisk egg, stevia and Majka until white and smooth. Add cottage cheese and flour, and mix well. Add mashed banana. Thoroughly mix everything with a spoon. Let batter to rest for 10-15 minutes at room temperature.
  3. Cut kiwi into circles and place on the bottom of silicone muffin cups.
  4. Mix the batter again and put into small silicone muffin cups.
  5. Place cups with batter on the oven tray and bake in the oven 20-30 minutes or until golden.
