We were recently inspired by Megan of Happy Belly Nashville, who created a delicious lemon coconut truffle recipe using our very own Nourishing Lactation Protein Powder! We love that this recipe is not only delicious, but also packed with nutrients that can specifically benefit new moms. It’s also super easy to make and take with you on-the-go, which makes it the perfect snack to reach for on those busy days.

We tried out this recipe for ourselves and loved it, so we knew we couldn’t keep it all to ourselves! So, follow along as we share Megan’s delicious lemon coconut truffle recipe. Make sure you read until the end--because we’re breaking down the ingredients and why they’re so beneficial for your health!

 Ingredients:
  • 1 1/2 cups raw cashews
  • 1/2 cup shredded unsweetened coconut
  • 1/2 scoop Majka Lactation Protein Powder
  • 1/2 lemon, zested & juiced
  • 1/2 teaspoon pure vanilla extract
  • 6 pitted Medjool dates

Directions:

  1. In a food processor, mix together cashews and coconut until finely ground.  
  2. Add all remaining ingredients and process until a smooth, sticky ball forms.  
  3. Roll into 10 bite-size balls, and cover in more shredded coconut.  
  4. Store in the fridge for up to a week, and enjoy whenever you need a sweet boost of energy!
